Layout came with Book Name/Chapter Name Header, how do I edit it?

I'm using the trial of InDesign CS6.

I'm using a pre-set up layout for my cookbook and it came with a table of contents, which I can easily click on and edit, and also with a little field at the top of most pages (it starts a few pages in) that says, inside of a line of dots, "Book Name/Chapter Name". I can't click on this, unlike the table of contents, and while I've poked at the Layout>Numbering And Section Options, nothing seems to give me a place to enter the book's name, or allow me to edit the chapter title. I'd be perfectly fine with making this go away if I can't edit it. There is a dotted-border footer with the page number as well, and that's working perfectly.
