I'm new to Captivate so there may be a better way to do this ..... but at the moment I'm trying out my course using Preview>in web browser (F12). I've noticed that if someone uses the progress bar icons (blue circle below) then they can skip over some of the text in the slides
I've created some smart shapes (red circle above) to move back and forward but is there a way to remove the progress bar (or stop people from using it)? By default it tries to "play" through my slides but my slides have static text so I don't want it to play, I just want the users to be able to click through each bullet point on the slides

You can make use of a button object. It is available in menu item Insert > Standard Object > Button
- Button object dialog launches. Go to Options tab
- Set the Appear after time such that the button appears once the slide narration and contents are displayed.
- Go to Button tab
- Set the On success option to go to next slide
Thus this button will appear only when complete slide audio is narrated. Clicking on the button will take the user to next slide.
Also you will see a playbar in you final movie. You can remove the playbar by going to menu item
Project > Skin Editor > uncheck Show playback control

Indeed, but you have Captivate 6 and the Shape buttons: much easier now, because you do not have to copy/paste the button to each slide. Shape buttons can be put on master slides or timed for the rest of the project (which gives you more control). Have a look at:
