Changing any parameter of a preset means you're no longer using that preset, so it changes to Custom.

In case you missed it, his program is 2hours 40 minutes, so in that case, space is at a premium and I would go for the Dolby.
It is normal for Media Encoder to create PCM audio, that is OK, Encore will TRANSCODE it to Dolby later and shrink it down.

Jeff is right.
Let Media Encoder make the .264 and .wav files and have Encore automatically transcode the pcm to ac-3 (since it's licensed to do so and AME is not). Don't multiplex them into a mp4 or mov container; it'll make it blu-ray illegal (even though Encore will allow you to import it).

Meh. I just put a 3 hour program onto Blu-ray, took up only 17GB. Plenty of room for PCM audio and about a dozen motion menus.

As I told Jeff before, my menus are taking up almost 6.5 GB of space in Encore.
I only have about 18 GB to play with for the encoding of my 2 and a half hour weddding that's in Premuere Pro CS 5.5 right now.
I had read that I should always set my Target Bit Rate to at least 17.5 and Max around 20 to get really good HD Blu-Ray quality footage. If I do this, the fiole is going to be over the 18 GB that I have left. This will not work.
Is this true about the 17.5 Target Rate and 20 Max Bit Rate?
I really need to make the video look good.

I want you to forget what the size estimate says, I do not believe your menus will take up 7GB of space, Encore is going to transcode and SHRINK that all down
