Should I just empty the Premiere Pro Preview files for example or will this casue me problems down the line?
You can delete the Preview files before archiving without consequence

Also, after archiving projects, you can delete
your Media Cache files to recover additional disk space.

Very helpful and just what I needed. :-)
There are only three things you need to save when arching a PP project.
1 Premiere Pro project file.
2. After Effects project file (if any Linked comps)
3. Assets - including video, audio and images.
Everything else is unnecessary.
If the project went to disk, you'll also want the Encore project file and folder.
