I am putting together a number of interactive forms that will be accessible through an intranet to techs out in the field. The idea is to make it possible for the techs to fill in the interactive fields in the forms, then directly submit the forms with the 'submit by email' button or save and email them. Is it possible to NOT allow changes be SAVED to the original document, but still allow changes to be made to the form so that it can be submitted or saved with a new name?

Since you are looking to submit form via email (save and email) so am assuming that you do need capability to fill and save the form.
Thus if you are looking for a use case where same form can be used for multiple submissions -- have you considered an option to have a reset button on the form which can undo all user filled values and allow him to start fresh?
