No. The summary report is the report for the table (and the "All Responses" sheet) of the responses you collected. If you add additional tables/sheets, these will not be reflected in your summary report.
As a workaournd, you can export it (main menu File/Export Responses at View Responses Tab) to say Microsoft Excel format and do the editing there or maybe create the report there. The export will export the additional table/sheets that you added as well.

Related question, if I move response data to an additional sheet or table does that row still count toward the 5000 response limitation.

No.
Make sure you also delete the corresponding rows in the Responses table

One more thing that I left out in my previous response, make sure you export your responses to say Microsof Excel or to a PDF file or CSV file before you delete the rows in the Responses table (Select File/Export Responses in View Responses). FormsCentral no longer support additional tables/sheets beside the Responses table
