.getSymbol() function would link you to the objects inside of Symbol and when you use .hide() function after that it cant find anything to hide because now you are already inside of that symbol's that leads to nothing !!
but when you use .$("yourSymbolName") you link Jquery to that symbol not inside of it !! So you can use .hide() function to hide it because now you have an valid symbol to hide

The fundamental thing to understand is that hide() is a JQuery function and requires the DOM handle. When you say getSymbol(), you're getting Animate's construct (or object). In order to make your latter code snippet work, you would need to use:
