Your question: Is there a way to remove the CC button or rename it?
My Answer: There is crrently no way to remove the cc button. When user clicks on the cc button, Notes pane opens up. You may rename the notes pane to something like scripts, captions etc. You cannot rename the cc button.
To rename the Notes tab, goto Themes->Modify Text labels->Find 'Notes tab text'. change it to whatever you want.

Your Question : Is there a way to remove the date stamp that appears at the bottom of the notes in the Notes pane?
My Answer : I do not see any date stamp.. Are you talking about the time remaining text that comes at the bottom of notes pane ?
If so you may hide it using the following: goto Themes->Modify Text labels->Elapsed time->delete the text. add one blank using spacebar. Publish.
You should not see that string again in the published utput.

To answer your question about #1, we are attempting to use the Notes pane for the Audio transcript AND a detailed description of the visual elements. This is in an effort to make the Presentation most 508 Accessible.
We are unable to adjust the highlighting that is activated by the CC function. So we are trying to figure out if we can:
a. Adjust the automatic highlighted activated by the CC function,
b. remove the button, or
c. rename the button.

The CC is supposed to work like this in presenter:
Whatever script you write in the notes tab ,the duration of slide is equally divided for highlighting all the lines .
We as a author cannot adjust the automatic highlights. It cannot be exactly synched with th eaudio
Also currently we do not have a way to either remove or rename the cc button.

For #1: Could this CC function be fixed to not highlight the lines automatically? Since the notes field may be used for more than just the Audio Transcript. In our case, we are using that Pane for multiple functions. The highlighting text does not make sense in this case.
For f#1: Currently there is no way to not highlight the lines automatically. But we are providing the way to do so in the coming Presenter release.

We are currently testing with Adobe Presenter 8.0.1 Build 260 and the current Trial version.

We are comparing the accessibility features of Adobe Presenter and Articulate Storyline for use in our current project.
There is no way presenter adds time stamp to your published output automatically.
It must be some setting in powerpoint.
Could you please check the following:
Goto Insert->Date and Time->Select Notes&Handouts tab.
Make sure that date and time is unchecked for Notes and handouts.
