The only possible limitation that I see is the monitor size, but then I have very old, and tired eyes. I think that I would go completely blind working with my Adobe programs on anything less than a 17" monitor. However, that monitor size works well for many "younger folk."
Having that second physical HDD/SSD will be a boon, when you do get to video-editing. I use a general configuration, as per my article: http://forums.adobe.com/message/4028199#4028199 I give up a bit of performance, but it makes "housekeeping" easy, and I know where everything is.
While I like having a 3x drive I/O system, many, many do just fine with a 2x drive.

From a hardware point of view, that is well in excess of what you'd need for Photoshop and Lightroom, and I think you'd be pretty happy running PremPro on it as well. Most of the high spec laptops seem to support two or more external monitors, but that kind of negates the whole mobility aspect of using a laptop. BTW I have a similar thread running at the moment.
