We are working on making this better but in the mean time you can either
1) manually make those fields taller in the Design Tab (drag the bottom right corner of the multi-line fields) or
2) you can print the Detail View in the View Responses Tab (View > Detail View then the print button is at the bottom of the detail view right panel)

We've changed how we generate PDFfiles from responses. If the response is too long and getting cropped we will now automatically expand the field to show all of the text in the outputted PDF.
This does not help when you externally send the pdf form via email to someone and get the response back cut off and impossible to print.
When will this be available? I see you commented in August of last year but I still don't see the box expanding other than a plus sign to scroll through. I'm very surprised you would drop the ball on this one as it's a very common need for form developers.
I am currently experiencing this problem and I am in desperate need of help since i need to share several completed forms with a review panel. Does anyone have a solutuon???
I have the solution. It's tucked away in a very hard to find place. Few Adobe customer support reps even know about it's existence
Select your form and click Open so you can see the table of responses.
Make sure you're on the View Responses tab.
Click the eyeball icon (views) in the toolbar.
Then click the Row Details button that will appear in the toolbar near the eyeball icon.
A sidebar will pop out on the right side of the screen showing all the details about the currently selected row. Select the row you want to output.
In the bottom right corner of that details sidebar, there are buttons for print and export. Use those buttons. You will now be able to see the entirety of the data entered into each field in the exported PDF or printed file.
