I am trying to look for evidence of the amount of work hours I have completed on my computer using InDesign.
I am hoping a log is kept on my Mac showing when InDesign files were opened and then resaved (possibly as a new file name). I might be able to use that as proof of time worked.
Does anyone have any ideas on the matter?

No, not really. But even if it did--and manual computer application timers as well--it would simply show how much time the file was open, not a real work time.
In an active InDesign file, Cmd/Ctrl-Click on About InDesign - on Mac, it's under the InDesign menu; on Windows, I think it's under Help > About. You'll see a lot of info about what was done to the file and when.
I've never heard of timekeeping or time tracking software for InDesign, but there is plenty of software out there for timekeeping. Just do a Google search on "timekeeping software" or "time tracking software."
