In Acrobat, turn on overprinting by opening the Output Preview panel (Tools > Print Production > Output Preview).
Ah, in Acrobat it looks fine. The above screenshot is from the Mac "Preview" app. I hope this will print fine once I send it in to the commercial printer..?
It's known that Preview does not offer a reliable....uh...preview.
Don't use Apple Preview to check your PDF files. It supports only a subset of possibilites of any PDF file. It is not a reliable program to view PDFs.
Problems are in the first place with PDF 1.4 and higher. That means: Layers, Transparency but also Forms are not shown correct.
