left over stuff in the code

I noticed when viewing the full code I still see symboles that I have deleted. Do have to start new project?

Are you in a situation that you have elements, that were part of your symbol on your stage. Because I think that you have to delete all the elements in your timeline (that were part of the symbol) before you can successfully delete a symbol.
