In order to get a Flash based flipbook to work on Apple mobile devices, is it always the case that I will need to keep it hosted on the vendor's server in order to get the embed code that will make it compatible?
Is there any case where the flipbook can be downloaded, uploaded to my site - on my server, and indeed work on the Apple devices?

As of the latest versions of AIR you could make an AIR for iOS app that downloads SWF content off a specified domain and it can even contain code.
If you're only referring to the browser (as in Safari, etc) on an iOS device then no, iOS does not support Flash.
