am trying inDesign as I want to design a coffee table book. When I drag and drop photos they seem to be low quality in spite of the fact that the files are extremely high quality. Some up to 100 MB. Does the trial copy of inDesign lower the quality of files? I need very high quality as if I buy inDesign I will be designing a high quality book for the market.

Don't mix high size with high quality. Just because a photo has 100MB size, it must not have high quality. ID just copies low res snapshots of linked files into the INDD, unless you embed, sou you could even see them when the linked files is lost or moved. But for printing, it is recommended to downscale the 100MB photos to 300dpi and CMYK colour format.
Enabling high quality display significantly slows performance down and increases RAM use.
