Why won't InDesign grep "Found 2 ($2)" in "Change to:" field work?

I need to reformat text set up this way:

      _this text should be italic_

so that the words between the underscores is styled as italic text.

      So far so good.

I tried to remove the underscores at the same time I made the change by using $2 in the "Change to:" field.

      This is the result:

      _$2_

      In italics and everything!

      Here's a screenshot:

If I leave the "Change to:" field blank, the text becomes italic, along with the underscores (like anyone could tell the undercores are in italics).

      Like this:

      _this text should be italic_

I'm new to this grep thing and I'm probably going about it all wrong.

How do I make the text between underscores italic and get rid of those underscores in one step?

Right now I have to get rid of all the underscores globally, even those I may want to keep.
