Please open the form in FormsCentral, click on the Options tab, select 'Email Notifications' and make sure that the 'From' field is set to correct Email field.
Let me know if this resolves your issue,
It is already set to that specific from email – hence my question… what else can I do then?

Just to make sure, please open the form, select Design tab, and select that Email field (which you have linked to the Email Notification 'From' field), on your right you will see the Field Property panel, What do you see in "Field Type" ?
If it is not email type, then please change that. If it is, then please try the form via the Test Tab. Select Test Tab, select Test Web Form, and try it out as it you are the form filler and enter the Email address and check if the email notification that you receive has the right 'From' header.
