I managed to get some cool ariel shots the other day on a GoPro mounted to a Quadcopter.

I've tried adding image stablization / rolling shutter repair, I've also tried twixtoring the footage as well but none of it seems to do the trick.
Is there any help you could give me on trying to remove all if not most of the jello / rolling shutter?

Dont think you can fix this in post.
This is pretty hard to correct in post. You need to isolate the vibration from your QC, by balancing the props, and by using some kind of vibration absorption, like this:
