You really only need to find a font that looks good for rebuilding if you reset it all.
It may have to be matched visually. If the fonts are ALL turned to outlines, there is no way to tell in the PDF file.
You may be lucky if the (crazy) person doing it missed a few spaces, the font references could still be there. Choose File > Properties in Acrobat and click the Fonts tab to look for things that got missed.
