      how do I create a field (like a browse field) to attach documents to a form

          Assuming that you are A) signed into FormsCentral (you can use the Desktop application without signing in, but need to be signed in) and B) you are in "Web View" (there is a view selector at the bottom right corner for "Web View" and "Page View", also from the "View" menu) - there is a "Attachment" field in the "Add Item" toolbar:

          When you are adding one field adjacent another the attachment is not displayed in that Add Item toolbar as it requires a full row.
