Is your end goal to use "FormsCentral" to collect that data? If this is a general PDF forms question not related to FormsCentral I can move the post to the Acrobat Forms Forum, this Forum is for FormsCentral (which is an online form creation and data collection service). I want to double check that you are not looking at FormsCentral before moving the post...

Well, I suppose it could go either way... I'd be open to having the form on
the website for sure, but I'd also like to email it to people...
The idea is for people browsing out website to be able to tweak little
things and get a realistic quote for an event, so that's why formulas would
need to be integrated... Once they hit 'submit', then we'd get a contact
form with that data.
Alternatively, I'd like to be able to send them that PDF with formulas in
it after making initial contact and let them fool around with it
