Some form changes can impact existing response data. Obviously, if you were to delete a field the corresponding column in the response table would be removed and you would lose the data. Adding/resizing fields, modifying field labels, etc. don't impact response data.
In the case of changing the content of choice fields (including drop-down fields) you will be prompted if you make a change that impacts existing response data. You can modify the label of a choice without impacting existing responses - any existing response data will be updated to reflect the label change. If you remove a choice you will be prompted to either clear the existing values or preserve them and have them marked as an error.
