I think I have cracked, sorry folks.
So you've figured it out, right?
I assume that you have found how to Select the Button's Text in the Menu Editor screen, and then by using the Color Palette, have modified that Color to something with more contrast, against the background. Is that correct?

I have sorted it now thanks. Why don't Adobe put their commands exactly where I think they should be. If all replies are a quick as yours, I might ask for help on some of those other things for which haven't found a solution.

Several of us will agree completely with you on that. Some of those will also complain when Adobe changes the names and locations of common actions, from previous versions.
However, we are blessed with people, like Steve Grisetti, who usually has a new book published upon release of a new version of PrE, and he tells us where thing went, and what they are called in the new version - that saves us hours of hunting.
I might ask for help on some of those other things for which haven't found a solution.
And, just what might be those things? We all are glad for the opportunity to be of assistance with your Premiere Elements workflows when needed.

The Color Picker was brought up by clicking on the "Change text color" button to the right of the Font Size.
