you can use yourTest.split("'").join("&");
kglad's approach ( with join("'") instead of "&" for apostrophes) will help if you problem is at the flash end, but its not entirely clear to me that this is the case... because you mentioned using stripslashes which is PHP. Is your problem with the XML at the flash end or at the server?
after a bit of googling i found the answer to my problem...
i found that if you press the render text as html in the text fields properties that it got replaced all the enciding with the porper charactes
