Sounds like a missing font that was used for the bullet glyph.
Thanks for your answer. Wouldn't that font have been packaged with everything else? The preflight didn't show any problems.
I just checked the font used for the square bullet and it was indeed packaged with the whole document. I would appreciate any further insight...

Check the style definition and make sure that font is specified.
Thank you for your reply - I just looked at the paragraph style that is applied to the text around the bullets. It is set to "No paragraph style". The bullet point sentences use the font Noble, but the bullet style is set up in the dialogue box. In the bullets dialogue box I apply bullets using a specific character with its own font - Soleil. (I hope this isn't confusing)
In the dialogue box I see the square bullet and on the page I have the square bullet. There is nothing to indicate that I might lose that square bullet or font style that I have used for the bullet. It all looks perfect, until I package it... After I package it, I have the numeral '5', which tells me that InDesign is throwing away the bullet instructions entered in the dialogue box.
I still don't understand why it woud change on packaging.

That's not good. You should define a bulleted list style, and a character style that specifies the correct font to apply tho the bullet.
I honestly don't know why the bullet is changing, though, if all of the fonts are packaged.
