Try changing the Transparency Blend Space to RGB.

How are you printing?
It sounds like your images are RGB, which is fine, but you should understand that many RGB colors cannot be reproduced in print with CMYK inks. By using a flattening space that matches the color mode of your images you get the best match during flattening, and leaving the colors as RGB until output allows for the best possible CMYK conversion for any particular CMYK device.

I'd try to find a local print shop with some experience in this type of book. Ask to see samples.
