    OCR Rotating Image Background Color

When I convert a TIF image scanned from a book to PDF, then recognize the text (OCR), Acrobat rotates the image as part of the processing. While doing so, it reveals a white background color that is distracting in the finished document. I can process the vertical and horizontal lines, along with the text on the original image, but I have hundreds of pages to complete. I can live with wedges of background color showing, but not a white background. How do I change the white background color to better match the scanned page color (RGB=221,216,203). Pages-> Edit page Design-> Background does not work because the program says there is no background.
