You have a few choices, depending on things such as budget, and whether you need/expect commercial support for the card. The least expensive and best performing option would be to go find MacVidCards on EBay. Just search for that exact word on EBay, and hunt around for his EBay page. Dave takes PC-based nVidia cards and makes them compatible with the Mac Pro's EFI, so that they boot properly, display the grey Apple screen, and run at full speed. nVidia won't support that, neither will Apple, and neither will the card's retailer. But, you'll have access to cards that have historically been PC-only.
On the other end of the spectrum of: larger price and less performance, you have nVidia's Mac-specific cards. Some of them are listed here. I wouldn't recommend any of them, but, you'll get end-user support from whichever manufacturer you buy them from.
