I suspect something else is wrong. Changing attribute values works in FM 12.0.2. I suggest you:
1. Reboot your machine.
2. If FM is still crashing, MIF wash your document.
3. If FM is still crashing, confirm that you can edit attributes in smaller, unrelated documents (for example on the root element of an EDD).

We have now worked out what it happening and it is to do with not having the Adobe S1000D application installed. We understand that Update 12.0.2 attempts to install a new file associated with the Adobe S1000D application. We believe that because the file is not there the updating process falls over and probably does not complete the process properly and leaves FM12 in an unstable state.
Because our application (Eclipse S1000D for FrameMaker) and the Adobe S1000D applications cannot co-exist (you cannot have two applications kicking in to open the same file) our application removes the Adobe product during installation.
I have tested the above assumption and basically
- Uninstall FM12,
- Re-install FM12, install Eclipse, install 12.0.1 results in correct operation
- Install 12.0.2 and the problem occurs.
then..
- Uninstall FM12
- Re-install FM12, install 12.0,1 and 2
- Install Eclipse
- All works fine.
When working you can add, change, delete attributes anywhere in the file without a problem.
It would be good have a roll-back process to that our clients won't have to re-install if they fall foul of the problem until it is fixed.
