I have a 4K monitor and all menu text are extremely tiny to say the least. I know that in preferences in Photoshop (for example) I can change User Interface menu texts to large, but that does not change all text and in, for example, bridge, all texts calls for a enlarger lens to be readable. Same in for example RAW plugin to photoshop where all control handles becomes small and difficult to use. Is ther a way to get these to "normal" size? As for now I need to set back the resolution.

That's the best Adobe deems fit to do for its customers.
The only workaround is to change your monitor resolution.
There in so other way.
In some cases the OS may also provide a way to enlarge text in the user interface, for readability purposes.
