The first thing to try is RotoBrush. This is a non intuitive tool and you must go to the rotobrush section of the help files and run through the tutorials. Because of the lighting and the similar background colors RotoBrush alone may not handle the project. You may need to learn how to do traditional roto to fix some of the edges than combine the mattes.
To find great RotoBrush resources just type Rotobrush in the Search After Effects Help filed at the top right corner of the app and follow the links.
Here's the best set of tutorials I have eve seen on traditional rotoscoping with masks. They were written by my friend Scott Squires. He uses Commotion (no longer available) instead of AE but the technique is exactly the same. Effects Corner: Rotoscoping - Part 1. Make sure you watch part 2 also.
