Seems like you want a low resolution display hook and external display to it.
OS X may have a way to scale the desktop so it display on your high resolution display the size it would display on a low resolution display.
Image should actually display smaller and sharper on your high resolution display because of its smaller pixels compared to low resolution display's large pixels. Images should display closer to their print size and sharpness.

Does anyone know what I can do to fix this issue? I would greatly appreciate any solution.
Laptop usually have a port of some kind that you can plug a desktop display into. OS support more then one display and the desktop can be extended the the second display. Photoshop and Wacom also support more the one display. You can put Photoshop UI all its palettes on the low resolution display where the will be large and readable. And you can edit you oages on the laptops high resolution display where the will display sharper near print resolution and size.
