how to I create a pdf that is password protected. I want users to have to enter my password to see, and also to prevent them from sharing.

You can't prevent sharing a file.

You can use certificate encryption including in it a list of possible recipients by providing their public keys (always include yourself!). Then only users who have certificates with private keys correspondig to the public keys in the recipients list will be able to open your PDFs. The problem with this approach is that each possible recipient of your PDFs needs to have a certificate (they can create a self-signed certificate in Acrobat) and send you its public key version.
