The moment you hit the Print button in the Print with Preview Window, the printer driver takes over and Photoshop is out of the picture.
I don't remember what paper options the 2880 has, but in the case of the Epson Stylus Photo 2220 each different option had to be added as if you had seven different printers or so.
I'll try to make a screen shot for you. from my 10.6.x boot drive as soon as I get a chance.
Right. And the only paper option I have that doesnt grey out when I am ready to print is this banner setting roll, whereas I am not using a roll but feeding sheets through a manual feeder slot.
I do have several other paper setting options but they arent accepted for Velvet Fine Art paper.

Here's the screen shot for you. Please overlook the icons with a circle through them, it appears over each of the printer icons because I was looking at them from my Lion boot disk, and the printers .apps are PPC only:
The grayed-out options on your printer suggest that the printer determines you don't have the necessary combination of profile/inks/printer (different black ink, for example; wrong profile?…) or paper size.
All of those printers are 2200s, not 2880s. You need to download and install the latest 2880 printer driver.

You are addressing your reply to me, and I don't have any problem whatsoever, I do indeed have an Epson 2200, and it prints absolutely fine from any version of Photoshop through 13.0.6.

Try to just skip Michael D. Sullivan's post. He got utterly confused, and his reply would only confuse you.
I did tell you that I have an Epson 2200, not a 2880 like Mr. Sullivan thinks and like you have, and that I would show you a screenshot, which I did.
You are the one with the 2880, and you DO have the 2880 printer driver. I hope this clarifies the situation for Mr. Sullivan.
Now, as for your issue, you still have to determine why you only have a single available option. Are you missing a proper profile for the combination of ink/paper/printer? For instance, my printer would show me all options grayed out if I try to use a printer option and profile for a paper that requires Matte Black Ink and I only have the Photo Black Ink physically installed in the printer.
