There are no such controls for Presentation mode in InDesign. I think the feature was more so a designer could show a layout to a client.
However, you should be able to get good image quality in PDF (in Acrobat or Reader) if you choose the correct PDF preset.

Saving your PDF as High Quality Print should be fine, assuming the images themselves are of high resolution. To check their current resolution, click on an image and open up the Info panel (Window > Info) to check Effective Resolution.
Of course, you can apply different individual page duration in InDesign before exporting PDFs, look into the interactivity section (Window > Interactivity > …), there is a panel, I can't remember its English name now, where you can define page transitions.
