This would work. Create a comp with your image on the bottom, an adjustment layer with Effect>Color Correction>Black and White added, a Text layer and a solid to use as a track matte. Parent the solid to the Adjustment layer, Set the solid as an Inverce Alpha track matte for the text layer, add masks feathered edges and blurs as needed to soften the edge if you like and you get this:

Here's a project file. Just put your photo at the bottom and adjust the black and white settings to get the look you want.
Dropbox - fancyColorWipe_CS6.aep (Note: Dropbox is probably going to add a .txt extension to the .aep file. Just delete it and you should be able to open the file)
