If you are looking for content published over HTTP using PHP you have two options.
1. Send HTTP requests to PHP files responding with XML.
2. Send HTTP requests using SOAP protocol to PHP based Web Services.
Either way you are going to spend a decent amount of time doing the work, or re-work, to publish that existing data to the Flex front end.
Here are a couple links you can check out.
Flex, JSP but will give you the same concept
Adobe tutorial on "Loading external data with HTTPService"
All the best.
I am going to shamelessly plug another Adobe product: ColdFusion. We have a ColdFusion Connectivity Kit for Flex Builder that contains wizards to help you create data access objects - both the ColdFusion CFC (components) and ActionScript classes. Using CF allows you to exchange binary data with Flex.
However, I've used both PHP and JSP with great sucess generating XML for use with Flex. Flex 2 contains E4X, a souped up way to parse XML that makes dealing with XML in Flex data pretty easy.
