Is there any way I can enter this into the paragraph style GREP settings so it is applied automatically without the need to run a Find/Change?
I click on 'create new GREP style' but am not given the find / change boxes to add the command into.
GREP styles only apply styling to found strings. They can't "replace" or add any characters which aren't already there.

Supposing I wanted to add a tab before as well as after the first character of a line - would that be possible? Or am I getting greedy?
No worries, GREP is greedy by default as well
Use the same 'find' but change to
-- where each "\t" is a Tab and "$0" is 'the text just found', i.e., what gets highlighted when you press "Find next".
