It's not clear to me what you're asking. Can you please re-state your problem and elaborate.
Also, tell us what version of InDesign you're using, and what platform.
I would like this Character Style 1, Character Style 2 to be a mirrored image but without the list.
Example: existing document.
- John Doe, born; died; (M) Wife, born; died.
John Doe, born; died; (M) Wife, born; died.
If I change something on the existing document I want it to change on the new document with the character styles with them too.

So to clarify, the only thing you want differently between the current document and the new document is to remove the numbered list?
Is the numbered list applied by typing "1. " and so one for each item; or by applying a paragraph style which creates the numbered list?
If a paragraph style, you could change the paragraph style to remove the numbered list.
If typed, it should be able to be changed with GREP. I'm not a GREP expert but someone here could tell you how to do a GREP search/replace.
