It isn't necessary to reinstall Lightroom. Doing so isn't going to change the folder structure that has been created. If you really want to start over completely just choose File/New and create a new catalog. The catalog is where the folder structure is stored.
The folder your images are stored in has nothing to do with Lightroom. They are either created by you or they are created when you Import images into Lightroom.
Lightroom has the option of importing from a memory card or camera connected to the computer and creating folders by date, in different formats, MM,DD,YYYY, YYYY,MM/DD,DD/MM and so on.
Or if you Manually Copy images to the hard drive from a memory card or camera to a Set Folder structure and then you select "Add" in the LR Import dialog window it leaves the image files where they are and just ADDS those images to the LR Catalog.
The folders you listed, 2014-06-10 and so on are created by LR because you Told it to do so. Those are Dates the images were taken.
If you want all your images in one folder, like by the year and no year, month or day sub-folder created, that is also an option that you select.
I suggest you start off by going to the Adobe TV website and view tutorials on how to actually use Lightroom and how the Import dialog window works.
There are also some very good books on using Lightroom. The one by Martin Evening is one I suggest.
