Clipping highlights don't agree with visual assessment of image

I'm importing raw images from a Nikon D700. I can move the Exposure slider all the way to the right, to the point where a large part of an image is obviously saturated, but the red clipping highlights are not present in those blown out areas.

I've read several posts about this but am confused so would appreciate a simple explanation and/or recommendation on what to do to make the clipping highlights more useful.

Some posts have attributed this to the internal use of the ProPhoto color space. But even if I soft proof an image to sRGB, the same thing happens. How do you know, if you export a JPEG in sRGB, that your image will not have blown highlights?

      Thank you.
