InDesign is simply listing all the fonts you have installed (or that software has installed) on your system. If you're using InDesign CC, you can set Favorites, and filter to view only Favorites.
Click the star icon on the font list in the Control panel or Character panel beside the fonts you want to see most. Then click the star filter at the top of the list and only those fonts will appear. To see all the fonts again, click the star filter to unfilter the fonts.
If you're pre-CC and don't have the favorites feature available, you don't have to waste time hunting. With the font menu (field) active, just type the first 2-3 letters of the font name and InDesign will jump right to it.
