I used to be able to choose "Adobe PDF" as the printer when I export my document through Print Booklet.
For some reason, selecting "Adobe PDF" is no longer available. Does anyone know how I can get this option back?
I believe it disappeared when I uninstalled the driver for my printer. But I have since installed it and there is still no Adobe PDF option available.

You don't say, but I suspect you are using a Mac, and the PDF virtual printer has been gone from OS X for quite awhile. See InDesignSecrets » Blog Archive » Acrobat’s Adobe PDF Printer Replaced in Snow Leopard
I would recommend not to use the booklet function in InDesign. Imposing is a work that the printer has to do, not you.
Export a PDF. Other applications without PDF export have on the Mac in the Print dialog a PDF button, there is Save as PDF with Apple's Quartz engine and if you have installed Acrobat Pro you find the better method to save as Adobe PDF.
