I'm new at Illustrator so I apologize in advance for this simple question, but I searched around and could not find a answer.
I have outlined some letters and want to fill different colors inside, like on the logo I attached underneath.
How do i do it the easiest way? Tried with Pen Tool, making a circle and then using pathfinder but can't get it to work.

There are many ways to do it.
Perhaps the easiest, direct way would be to create a gradient, but you'd need to edit lots of stops/knots (the color points)
Dig into making a PATTERN and using CLIPPING PATHS (like clipping mask in Photoshop).
This way you can edit the pattern, the position, and the angle of your stripes easily.
Here's one way to do it:
1. MAKE A PATTERN.
I created a series of rectangles with the approximate shape and color I want to repeat
2. MAKE A NEW RECTANGLE & APPLY THE PATTERN
this goes in the same layer as your graphic
3. with your graphic(path) above the rectangle(path) in the same layer, MAKE A CLIPPING MASK
4. ROTATE the rectangle (make sure you have "transform pattern" turned on)
