The Search Replace Transfer plugin has the ability to copy all of a pic's keywords to the caption -- it doesn't have the capability of copying just the person keywords. (You can easily identify just the photos containing person keywords using the following recipe: If you haven't done so, put all the person keywords under a parent keyword "People". Then when you filter the pics by the People keyword, you'll get all pics that have a person keyword assigned.)
Oh my goodness! That might just be the answer. I'll try it out and see how I get on.
This solution is so close, but there's one problem. If I want to use the Search and Transfer plugin I have to take all the keywords and add them to the caption field - I actually only want the person's name (each image has many keywords which we're using for the Smart Collections). I can't see a way that I can get it to only transfer the keywords under the Parent keyword tag (if that makes sense)

Yup, that's the limitation I alluded to. I don't know of any out-of-the-box solutions that does exactly what you want.
You might ask the plugin author John Beardsworth for an enhancement -- he's a frequent participant in these forums, and his contact information is probably on the plugin Web page somewhere. If you're technically minded, you could write a script using Exiftool that extracts the people tags and appends them to the capture, but even if you're proficient with Exiftool and scripting, that would probably take an hour or two or three before you have it exactly right.
