My hosting server is CF9. Want to upgrade to Builder 3, but it defaults to CF11. Can I change to CF 9? How?

Can you clarify that the “it” is which is defaulting to CF11 for you? Do you mean for instance the language support as you type? Or do you mean a server connection you are creating or using? Those are two quite different things. Both can be configured, though. But since you say something is “defaulting to CF11”, it would seem you’re seeing that listed somewhere, and it should be easily changed there. So please do clarify what you mean.
If it’s the language support as you type (code assist), you change the version by going to Window>Preferences>ColdFusion>Profiles>Editor>Code Assist, where there’s a drop down for the version to be supported.
If it’s a server definition you mean, you go to Window>Show View (or Other>ColdFusion)>CF Servers. Then right-click a server, choose “edit server”, then “next” on the first screen, to see the choice of version to be supported, in the initial Local Server Settings tab shown there.
Or again, did you mean something else which “defaults to CF11”?

In addition to Charlie's thorough comments, it might be worth noting that CFBuilder 3 is the first version that comes with an embedded ColdFusion server installed inside. That embedded ColdFusion server is ColdFusion 11. You don't have to use it though, and you don't have to start it up ever if you don't do any <cfclient> development.

Am still working on getting CF Builder 3 up and running correctly. Am experienced Dreamweaver user but first stab at CF Builder.
