Before you try to uninstall Acrobat Reader, please make sure to back up your PDF documents that are locally stored on your iPhone. When you uninstall any iOS app, the operating system (not Reader) will erase all of the associated data including documents and preferences.
Would you explain what you mean by "App does not load"? Do you mean that (a) Acrobat Reader does not launch/start or (b) Acrobat Reader does not open any PDF document?
Does it look like the app is crashing?

App installation is handled by iOS (the operating system), not by Adobe Acrobat Reader.
Here are a couple of things that you can try.
(a) Can you tap the icon several times to resume installation?
(b) Can you press and hold on the icon to see if you get an 'X'?
If you see the 'X', then you should be able to uninstall it.
(c) Can you uninstall it from the Usage screen?
- Go to iOS Settings > Usage > Manage Storage > Adobe Acrobat. (You may need to scroll down in the right pane to find Adobe Acrobat.)
- Tap Adobe Acrobat.
- Tap Delete App (in red).
- Tap Delete App in the confirmation alert.
Does any of the above help?
Your problem is not specific to Adobe Acrobat Reader. The problem (of app installation getting stuck) can happen to any iOS apps.
