I can't change the column or guttering in Book module any more - Any ideas?

I use Lightroom (CC) to create annual photo books. These are quite hefty books being 190 pages long and holding over 16,000 words/ 968 photographs. I am approaching the latter pages and for some reason when I have a double-page spread and have page text overlaid, it is now preventing me from changing the default column count (1) to 3 and the guttering from (0) to 100. For some reason both of these sliders are greyed out.

I have tried toggling every conceivable toggle combo to no avail. I am still able to go to other pages which pre existed in which their column and guttering is still editable.

Any ideas - is this a bug or am I missing something? I've included images below.

This is what I want to happen (earlier pages in my book):

*Please also not that the columns are locked/ greyed out on 3?

This is what I am currently getting: (Please note the Columns/Gutter section).
