I am new to InDesign and I am trying to teach myself how to create an ebook. I am trying to place photos in InDesign but they are appearing jagged and blurry. I edited the photo in photo-shop and resized it at 72 ppi (which I read was a good resolution to save it). Is there a better way to resize it and save it?

A good bet would be about 150 pixels/inch on an iPad. 72 ppi will make it look like you're seeing.
That's one of the greatest mistakes/bugs in InDesign. "Resolution" does not exist for ePub or media shown on screens. These are pixel dimensions (Adobe engineers: please finally change it).

The pixel dimensions of the retina iPad are 2048 x 1536 px.
Non Retina iPads are 1024 x 768 px
