how is the audience going to download something onto their touch screens ..or do you mean you will provide the touch screens?
anyways. ipads do not make it easy to work with web files. Are you planning to work with IOS and android?
I mean that I will provide like an ipad for them to view the presentation and want them to be able to touch it and interact with it.
easiest way is to export your project as a .wdgt and import it into ibooks ..then export an ibook. Get that ibook onto your ipad. when you open the book it will be an html5 interactive.
to get the ibook onto your ipad ..you can do it through itunes or download it with Good Reader or the free Puffin browser ..after downloaded you do a "open in" and pick ibooks

the three options are: web, Animate Deployment Pages, and ibooks / os x
web does the normal website directories
Animate Deployment Pages makes a .oam
ibooks makes the .wdgt
im hesitant to recommend Edge if you are going to use it on a Mac ..the latest version seems to have a Ram issue :/
I'm not talking about just for this project. I'm asking what it can export to generally. As in can I export a .gif, .html , etc.
I do have a mac! What would you recommend?

maybe the 2014 version until they fix it ..download the trial of the 2015 first and see if it works for you.
You could possibly use Flash for some html5 animates ..but they won't scale to different screen sizes like they do with Edge.
